$5 for the best CKT of your life. Not many places come with all toppings anymore, but this place has it all. Clams, prawns, sausage, and crispy pork bits, with reasonable amounts too. The flavor and char were just incredible all the way to the end. They made me realize that small crispy pork bits is absolutely perfect. The flavor is already so strong, and some other places don't cut it fine enough so it totally overpowers a bite when you get it. This place gets it just right.
It's the little things here that really make this awesome: the corner stall means more table space, less heat, a relaxed line that doesn't block anyone or feel cramped. They were nice and brought food out to people so they could sit down.
Definitely get it with spicy peppers (La Jiao)
Wet kind moist & plump
lots of prep, effort & standing
spectacle to watch from side window
uncle continuous stir fry fury
spectacle to savour after the Q
as complex effort: soup stock ! for pre cook
de shell prawns, oodles heat stir to prevent burns
lard & chilli makes for smoking flavour
prawns & blood cockles for umami
b4 plating, add water & more lard pieces
friendly auntie cashier cleans up bits
meticulously neat uncle sequences & arrange nicely
sliced lup cheong neatly pile high
nothing more nothing less
tow gay & chives sprinkle
maybe too done for my tastes
prefer minute less more crunch
Maestro for his enduring efforts
note only open alternate days
Stall holder takes time to cook a few ages at a time. The result: consistent quality.
Priced at S$4 and S$5, the fried kway teow is popular among locals. Tasty treat.
Pictures speak more than words.
Unclr has been doing this since 1969, Char Kuay Teow (CKT) is toward the old school, legit, wetter style. Worth Q-ing!
Simple ingredients, egg, Chinese sausage (aka sweet lup cheong), cookcle (aka see ham), kuay teow, beansprouts (aka tau gay).
The CKT taste is more savoury than sweet.
Simple is classic, Q-ed 30mins+
Fun fact
Uncle pre-fries a batch of noodles and kway teow, this is to ensure the noodle have the work hei (fragrance)
Fyi
Not allowed to add anything like eggs or cockles
Recommended 👍 This stall is located at level 2, right at the corner, in the Yellow zone.
Hill Street #CKT. $5 comes with generous ingredients include 1 prawn and fresh cockles. Dry type. Tasty with balance satiness and other seasoning. Diff style compare to the CKT of same name at Bedok South. Friendly auntie and uncle. Worth the 20min queue. Recommend to try.
CKT (Cha Kway Teow or Fried Kuay Teow) is such a staple in Singapore and one can almost certainly find one stall selling CKT in any food centre in Singapore. Here in Chinatown Complex Food Centre, there are numerous stalls selling this dish, each with slightly different expression and flavour so to speak. This stall is one favourite of mine for CKT. And if you see a queue outside of peak hours, it is a sign that the food is good. And it is! There was a queue of about 10 at 2pm and the wait took about 20 mins - which is nothing really compared to the hardwork and skill that goes into the plate of CKT. What I like about the CKT is how the savoury-sweet flavour and wok-hei aroma is fully infused into the noodle. For $4, there is a generous amount of lap cheong, plump cockles and crispy pork lard. What is also amazing is that it is served in a proper plate and not styrofoam plate used commonly.
This is the kind of CKT that I was looking for. The fundamental ingredients a CKT should have are Chives, Crispy Pork Lard, Lap Cheong, Bean Sprouts, Egg, and Wok Hey. I'm satisfied with their CKT. The first thing that I tasted was the Wok Hey, it's super aromatic. i personally don't enjoy sg sweet style CKT, but this one is not sweet, thank god.
This uncle fried his noodles plate by plate, that's why it has enough Wok Hey, unlike other stalls which cook CKT in one whole batch, which can make the noodle soggy, sticky and no Wok Hey.
The queue can be long too due to this, they don't make CKT in big batches.
Read a lot about this CKT stall in Smith Street Chinatown Food Center so I finally had to come and to try it. Arriving at 2pm, the queue in front of me was about 10 patrons. Took about 30 mins to get to me as uncle fries each order separately and in between, he pre-fries a batch of noodles and kway teow with soya sauce.
Ordered the $4 portion. Not allowed to add anything like eggs or cockles. Sad.
The CKT is something in between wet and dry types. A little bit of wok heat and the taste is more savoury than sweet. You get about 6 cockles, 1 tail-on shrimp, a few pieces of Chinese sausage. No chives or fish cakes.
All in, it’s just an above average plate of CKT.
